Chocolate Covered Peanut Butter Stuffed Dates


You can use Deglet or Medjool dates
INGREDIENTS:
• 12 dates, pitted
• 4 Tablespoons Peanut Butter( you could use almond butter etc.)
• 7 ounces(200 grams) Dark Chocolate, chocolate chips or milk chocolate if you prefer.
• 1/2 tsp. coconut oil(or canola)
• 1/2 teaspoon cinnamon(optional)
• Sprinkle for the top: could be nuts, chia seeds, chocolate drizzle etc.
INSTRUCTIONS

Fill each date with peanut butter, 1/2 teaspoon for smaller dates, 3/4 for larger dates. Place on a tray and put in freezer for 10 minutes.

Finely chop chocolate( or use chocolate chips),add oil, cinnamon and melt in a heat safe bowl or pot over double boiler

Dip and roll each date in the melted chocolate, you can use a fork to help coat.

Place on a wire rack over a cookie sheet. Sprinkle or drizzle with topping.

Then place in fridge for 30 minutes or until chocolate is set.
